Dr. Yaw Gyau Akyereko is a Lecturer at the Department of Food and Postharvest Technology of the Koforidua Technical University, and an Adjunct Lecturer at the Kintampo College of Health and Well-Being, in the Bono East region of Ghana. He holds Ph.D, Master of Philosophy (M.Phil.) and Bachelor of Science (BSc.) degrees in Food Science and Technology from the Kwame Nkrumah University of Science and Technology (KNUST).
Dr. Akyereko has in-depth knowledge in Food Safety and Quality Assurance, Postharvest Management, Food Processing Technology, Food Product Development, Sensory Evaluation, Food Microbiology, Food Chemistry, Traditional Foods, Crop Production, Nutrition and Health, Nutrient Metabolism, Biochemistry, Research Methods and Laboratory Analysis. He has participated and presented at conferences, workshops and stakeholders meetings, and has to his credit 2 book chapters, 8 peer-review publications and over 15 conference proceedings. Cumulatively, he has about 7 years teaching, consultancy and research experience.
Dr. Akyereko has been a consultant for ENI/KNUST collaborative youth development project on value addition to some agricultural commodities (Cashew, maize, tomato, cocoa and poultry) for three years, and also consulted for GIZ/ComCashew for the development of non-alcoholic wine from cashew apple. His interest lies in social intervention research in the areas of food safety, product development, nutritional studies and value addition to underutilized crops, with the prime aim of maximizing utilization of underutilized crops to promote food and nutrition security and job creation. He is diligent in his career and open for research collaborations. Dr. Akyereko is a member of Ghana Association of Food Scientists and Technologists, Ghana Science Association, and National Seed Trade Association of Ghana.
