Dr. Eric Owusu Mensah is an applied Food Scientist and Entrepreneur, with a great passion of converting food and related research outcomes into ventures. He thus established and developed a food company firm which earned national recognitions including Best Food Processing Company (SME) of the Year (2016 & 2017) and Overall Best SME Company in Ghana (2017). Dr. Owusu Mensah joined the department of Food Science and Technology, KNUST, as a full-time lecturer in 2020. Hitherto, he was the full time Managing Director of Quama Food Processing Co. Ltd (Producers of Yofresh yoghurt), Postharvest Supervisor at Sweetpotato Laboratory of International Potato Center (CIP), Field Coordinator at Ministry of Food and Agriculture/GRAD, and Project Facilitator at Ministry of Trade and Industry (MoTI). His contributions to society span from delivering public lectures on entrepreneurship and business creation to reducing unemployment rate among the youth, consulting for food industries as such Premium Foods on product development, quality assurance, etc. Dr. Owusu Mensah is also the Manager, overseeing the operationalization of the Food Processing Unit at the  Department of Food Science and Technology, College of Science. Eric is an alumnus of KNUST where he completed both his Masters and Ph.D degrees.

Eric is a reviewer for many reputable journals and has published books and many articles related to his professional competences. He has served his community in several disciplines including organizing events (KNUST Food Festival, Convocation and GUSA Games), serving as internal and external examiner/assessor to several institutions. Eric is the Principal Investigator (PI) in finding scientific technology to combating fat separation in chocolate spread, and founder of the project dubbed Mining the hidden potentials of Calotropis procera. Eric is currently the assistant examination officer  of the department of food science and technology,
